Filling for 2 9" pies:
2/3 c fresh lemon juice
1 3/4 c sugar
4 1/2 c water
3/4 c corn starch
7 egg yolks
Pinch of salt
2 T butter

7 egg whites
1/2 tsp Cream of Tartar
4 T sifted powdered sugar
2 drops vanilla extract

Recommended Instructions

Boil lemon juice, sugar, water, corn starch, egg yolks and salt until thickens. When done, turn of heat and stir butter. Set aside to cool.
When cooled, fill in baked pie shells.

Prepare meringue: beat egg whites, Cream of Tartar, and powdered sugar, along with vanilla extract on high until stiff peaks form.

Spread meringue on top of filled pies. Broil meringue on low until slightly browned.

Chill pies in refrigerator overnight.
