Ingredients

2# dry peanuts
3 tablespoons rock salt

Recommended Instructions

Wash peanuts. In a large stock pot, cover peanuts with water. Sprinkle rock salt over peanuts and stir slightly. Place a large plate over the peanuts and weight it down so that the peanuts say submerged.

Soak peanuts overnight or for at least 3 hours.

Cook peanuts for 30 to 40 minutes over medium high heat to desired doneness. If you prefer crunchy peanuts, turn the stove off when a peanut is almost done (about 30 minutes and has a slightly raw flavor when tasted). Keep peanuts covered for another 15 to 30 minutes to continue cooking with the retained heat. Remove cover and keep peanuts marinating in the (salted) water for at least another hour to keep it moist.

** this recipe is for crunchy peanuts which are not too salty. If. you prefer softer peanuts, cook for another 10 to 15 minutes longer.
