1 pkg (10 oz) mochiko
1 cup water
1 can (14 oz) coconut milk
3/4 cup sugar
1/4 tsp vanilla
2 drops red food coloring
Katakuriko (potato starch)

Recommended Instructions

In a medium bowl, combine mochiko, water, coconut milk, sugar, vanilla, and food coloring. Mix until smooth. Pour mixture into a greased 5-cup microwave tube pan. Cover with plastic wrap and cook on MEDIUM HIGH for 10 minutes.

Loosen mochi by running a knife around the inner and outer edges of the pan. Remove to a board or platter dusted with katakuriko and cool. Cut into serving pieces. Coat with katakuriko.

Note: Use a plastic knife to cut the mochi. (Mochi does not stick to plastic knives.) If you do not have a plastic knife, wrap the metal knife with plastic wrap.
