Ingredients

4-5 cups Bittermelon, sliced

Sauce:
1/2 cup white vinegar
1/2 cup sugar
2 tsp salt

Dried Cuttlefish (squid), cut into 1/2"
Ebi (dried shrimp), cut in half or thirds if large
lemon

Recommended Instructions

Mix sauce, dissolving sugar; set aside.

Scrub lightly and clean bittermelon well; cut in half and remove seeds. (I scape off all the white stuff).

Slice bittermelon into thin slices and soak in water with ice for 15 minutes; drain well.

Combine bittermelon, cuttlefish, and ebi in a bowl. Pour sauce and squeeze lemon. Mix and refrigerate.
