1 cup finely chopped onion, finely chopped carrots, and finely chopped mushrooms, for 3 cups of mixed vegetables
2 tsp vegetable oil
1 cup chicken or vegetable broth
1/4 tsp salt
1/8 tsp black pepper
1 cup low-fat milk
2 tsp chopped parsley

Recommended Instructions

In a medium sauce pan, sauté the vegetables in oil over medium heat until tender, about 5 minutes. Add the broth, salt, pepper,and bring to a boil. Reduce heat and add milk; simmer to combine flavors. Stir in the parsley just before serving.
You may use other vegetables as long as you have 3 cups worth.
