Portuguese Bean Soup from Lana Paiva: Submitted by: Hazel Michling | Date Added: 18 Mar 2014

2--3 smoked ham hocks

1 lb pkg dried red kidney beans soaked in water overnight.

one round onion, chopped
1/4 bunch of green onion, chopped
Flat parsley, to taste
Three cloves garlic, smashed and chopped
1/2 green bell pepper, chopped

Recommended Instructions

Fry onion, etc. and add one can of tomato sauce or tomato paste, with several cans of water. Add salt and pepper and a dash of allspice. Simmer for about 5 minutes.
Drain soaked beans and place beans in crock pot; add onions,etc and cover with water.

Note that this is a plain bean soup. You can add Portuguese sausage, carrots, potato, kabocha pumpkin, macaroni.

I think you should use only 1/2 pkg of beans
If cooking in crock pot. I think you should cook on low for 8 hours. You could stir and check softness of beans every now and then.
